Vegetable Stew...
1 C broccoli florets
1 onion
3 cloves of garlic crushed
2 medium carrots
1 T olive oil
1 squash (yellow or zucchini)
1 t turmeric
1 t cumin powder
1 t chili powder
Saute onion, garlic, carrots, and broccoli in olive oil.
Add 1 cup of water and squash and spices.
Cook until vegetables are tender.
Serve over brown or basmati rice.
