Black Bean Soup...
2 C dried black beans
10 C water
2 T olive oil
1 large onion chopped
3 garlic cloves chopped
2 medium carrots grated
2 stalks celery chopped
3 T dried parsley
2 t cumin powder
2 t coriander
Several dashes of cayenne pepper
Soak beans overnight and cook the beans until tender.
Saute vegetables in olive oil.
Place cooked beans and vegetables in large pot and add water.
Cook for 15-20 minutes.
Reserve some bean liquid to add to the soup for flavor.
