Pasta Primavera...

1/2 pound pasta -ie. rotini, ziti, elbows, cooked to your selected tenderness and cooled.
Note: Use a quality pasta such as wheat, quinoa, artichoke, rice, buckwheat, etc.

4 cups (total) sliced or cut mixed vegetables of your choice.
Note: Use fresh vegetables in season.

    Example:
         cuccumbers
         broccoli
         cauliflower
         grape tomatoes
         celery
         radishes
         carrots
         scallions or onions
         peppers, green or red
         black olives

Dressing

    1/8 C olive oil
    1/8 C red vinegar
    1/8 t black pepper
    1/2 T pure maple syrup
    1/2 t garlic powder
    1/2 t minced onion or powder
    1/8 t oregano
    1/8 t basil

Directions

  1. Mix vegetables with pasta.
  2. Combine and mix dressing ingredients in jar and shake until well mixed.
  3. Pour dressing over pasta and vegetables and mix well.
Served cold.
