Tofu Omelet...

Omelet

    1/2 cake tofu mashed
    1 T Braggs amino acids
    1/8 t turmeric
    1 t olive oil

    Mash tofu together with Braggs and turmeric.

    Saute tofu mixture in olive oil using a medium frying pan on medium heat pressing down with back of spatula spreading out flat on bottom of pan.

    Cook 6-8 minutes until all liquid has evaporated and bottom is starting to sear.
Spinach and mushroom filling
    1/4 C spinach chopped
    2-3 mushrooms chopped

    Saute in olive oil together.
Add filling to half of omelet and flip over remaining half.

Cover with a lid and cook 2-4 minutes longer.
