Stir Fried Vegetables...

    3 T sesame oil or olive oil
    1 large onion chopped
    1/4 C ginger root, peel and thinly sliced
    2 carrots sliced 1/8 inch thick in rounds
    2-4 stalks celery sliced 1/4 inch thick
    1-2 C Bok Choy or Chinese cabbage chopped
    2-3 cloves of garlic minced
    1/2 C snow peas
    4 oz tofu cut in cubes (optional)
Saute onion, ginger root, carrots, celery, and Bok Choy or cabbage until tender.

Add garlic, snow peas, and tofu (if using) until sow peas are tender.

Serve on top of brown or basmati rice.
